Baby corn is available in white and yellow varieties and is usually three to four inches in length.
Eaten whole, baby corn is mature corn, simply picked at an earlier stage of growth, and has a much milder flavor than full-grown corn.
Baby corn is most often prepared whole-- boiled, or steamed and sauteed.
Baby corn is also well-suited for pickling.
