Description:
Meaty and dense, dried porcini mushrooms offer superb texture and bold flavor. It just takes a mere tablespoon or two to reveal its tasty and very earthy personality. Umbrella-shaped when young, it flattens as it ages. Pale yellowish brown to dark reddish brown, this mushroom is firm, moist and smooth when fresh. White to dingy yellow, its cap's underside contains many tiny pores.
Beef and onion dishes are this mushroom's forte. Add to stuffing and sauces. Perfect for making delicious risottos. Pair with polenta. Unusual for a mushroom, it especially loves the company of strongly flavored fish. To store, keep in dry place.
